I had reservations about these jelly bean cookies from the start. Don’t get me wrong, I think jelly beans are tasty, but I don’t really think they belong in an oven since they will melt and get all over the place. For this recipe I used a basic sugar cookie dough and added the jelly beans and hoped for the best…
- 1/2 cup butter
- 1 egg
- 3/4 cup white sugar
- 1 teaspoon vanilla extract
- 1 1/4 cups flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup jellybeans
Preheat oven to 350F. Combine flour, baking powder and salt, set aside. Combine butter, egg, sugar and vanilla extract and whisk together. Slowly add flour mixture to the butter-sugar mixture until cookie batter is formed. Add jellybeans and mix. Roll batter into small portions and place on cookie sheet and bake for approximately 7-9 minutes or until cookies are brown.
Kearney warned me on this one, these cookies suck. I mean, I guess they aren’t that bad as far as cookies go, the sugar cookie portion is very tasty. However, I don’t really like biting into a cookie and tasting licorice followed by my next bite tasting like cinnamon. Perhaps this recipe would have worked better if the jellybeans were all of a similar flavor, but since I used a mixture the taste experience was not very pleasant. Plus, the jellybeans melted all over the place and feel out of the cookies. Which is actually something I was expecting.
So basically if you’re going to send your children cookies while they’re away at summer camp you can probably show your love by just sending either cookies or jelly beans or both! It might not be as “creative” as jellybean cookies, but it I’m sure the thieving Camp Counselor will appreciate it.
