Danish Butter Cookies

Traditional Danish cookies usually come in a variety of pretty shapes, think Royal Dansk Danish Butter Cookies. As an aside, the Dansk website is a little odd – what with it “raining” Danish flags all over the place. Not really sure how the person in their marketing department convinced everyone that was a good idea, but there you go.

The cookie that Zach hands to Bart is rather plain looking. Not a fun pretzel shape or anything, which is kind of disappointing. Still, I strive for realism, even when doing that is hazardous to my health; so I will endeavor to make a boring old butter cookie that Danish people would be proud to rain their flags upon!

Ingredients:

  • 1 cup butter
  • 1/2 cup granulated sugar
  • 2 cups flour
  • 1/2 vanilla bean
  • 1 egg

Directions:

Heat the oven to 350 F and line a baking sheet with parchment paper. Using a stand mixer beat together butter, sugar and vanilla until well mixed. Next add the egg. Slowly add flour, scrapping the side the mixer as you go. Once everything is well combined, roll into a “sausage” shape with plastic wrap. Roll cookies into 2 or 3 inch dimeter and chill for 20 minutes. Slice chilled cookies and place on baking sheet. Bake for 12-15 minutes.

Just because it’s a basic cookie doesn’t mean it’s not delicious. Anything with that much butter and sugar is going to taste good. If I ever get the chance to travel to Solvang, California I will be sure to try out the local Danish cookie options. However, I’m more interested if anyone by the name of Gaylord Q.Tinkledink or Nerdletaub Z. Pantybottom lives there, so I guess I’ve got two reasons to visit now.
