I decided to forgo making the Bacardi and soda since I’m pretty sure a rum and club soda, while delicious, is one of the easiest and least creative drinks in existence. However, I did want my night to come alive with freshness so I made the Bacardi Colada.
Ingredients:
- 3 ounces of coconut cream
- 3 ounces of pineapple juice
- 11⁄2 ounces Bacardi rum
- Pineapple (to garnish)
Directions:
Combine ingredients into a shaker filled with ice. Shake vigorously and pour into a chilled glass (preferably a Bacardi glass because I haven’t dropped that name enough in this recipe). Garnish with a pineapple wedge.
First of all, I am not destined for bar tending greatness. It took me several attempts to create a pineapple wedge because it’s actually harder than it looks. And the one I ended up using was still questionable at best. Anyway, this drink tasted ok but needed a lot of ice. And more rum. Once I made those changes the drink was pretty good, although way too much coconut for my taste. To finish off this post, here’s a quote proving Homer also enjoys a cool, refreshing Bacardi Colada too…
